Healthy Snack Bites to Satisfy Cravings

I find that I do much better with making healthy choices when I have healthy options ready to go. If I cut up my fruit and vegetables ahead of time, I am more likely to grab those as a snack. But, when I have a craving that needs to feed my sweet tooth, if I don't have something on hand, I tend to lean into something not to healthy. One of my go to snacks is my home made chocolate. But another one, are these amazing snack bites.

Ingredients:


1 1/2 cup old fashioned oats (uncooked)

1/2 cup almond butter

1/2 cup pureed pumpkin

1/4 cup honey

1 tsp vanilla extract or vanilla paste

1/2 tsp cinnamon

1/2 cup coconut

1/4 cup hemp seeds

2 scoops of your favorite protein shake for the coating


Directions:

Pour out 2 scoops of your favorite protein shake onto a plate. If your protein shake doesn't have a scoop, about 1/2 cup should do.


Mix together all the ingredients except the protein shake. Once all combined, scoop and shape into a ball. Roll in the protein shake. I used coffee flavored shake, but I'm sure chocolate would be just as yummy!


Refrigerate & Enjoy! You can also freeze them if you'd like so they last longer.
